Paleo (with Benefits) Recipe: Pork & Beef Meatballs

This recipe is extra delicious because it’s incredible simple to do. I made these easy meatballs recently with steamed broccoli and baked butternut squash. Slather on the marinara sauce and parmesan cheese to fulfill an Italian craving.

What You’ll Need:

  • 1/2 lb. ground pork
  • 1 lb. ground beef
  • 1 eggs
  • 1/2 cup of milk
  • 2 cloves of garlic
  • 1/2 small onion
  • 1/4 cup of almond meal
  • Salt
  • Pepper
  • Olive Oil

  • Vegetable of your choice
  • Parsley (optional)
  • Oregano (optional)

Step 1. Chop garlic and onion finely. Heat small pan with olive oil to medium heat. Add garlic and onion. Cook for 2-3 minutes. Set aside to let cool.

Step 2. Mix ground pork and ground beef in a large bowl. Add egg. Mix together using your fingers. You’ll use your hands throughout the preparation, so either have a partner or get your spices and additional ingredients ready to be added.

Step 3. In a separate small bowl mix almond meal and milk. Let sit.

Step 4. Add salt, pepper, garlic and onions to the ground meat.

Step 5. Add almond meal and milk mixture to the ground meat. Mix well.

Step 6. Roll meat into 1 1/2 inch balls. Place about 1/2 inch apart on large baking sheet.

Step 7. Bake at 350 degrees for 18-20 minutes. Turn on broiler and cook for another 3-5 minutes or until thoroughly cooked. Meat should be browned.

Add to plate with marinara, parmesan, and a vegetable of your choice. Enjoy!
